Milan Serves the Future in a Cup: “AI Terra” – The First AI-Created Gelato

Milan, 2025 – Italy’s fashion and innovation capital has done it again, this time pairing culinary tradition with cutting-edge technology. Master gelato maker Gianfranco Sampo unveiled AI Terra, the first artisanal gelato entirely conceived with the help of artificial intelligence.

The project, born from months of experimentation and collaboration with machine learning experts, promises to revolutionize how we think about gelato. This isn’t just a marketing gimmick – AI Terra is the result of a genuine algorithmic process. The AI analyzed hundreds of ingredient combinations, sensory patterns, and culinary trends to generate new recipes blending harmony and originality.

The outcome? A surprising flavour: white chocolate with berry sauce and caramelized black pepper – a sweet-spicy combination that intrigues the palate and sparks curiosity.

“I didn’t just want to make a good gelato – I wanted to explore new taste frontiers with technology’s help,” Sampo told La Repubblica in January. “AI doesn’t replace the artisan’s hand, but opens creative possibilities we wouldn’t otherwise imagine.”

AI Terra fits into a broader context where artificial intelligence is entering traditional crafts – not to replace them, but to enhance them. In cuisine, design, and art, algorithms are becoming tools that expand human creativity.

The launch event in Milan let visitors taste the AI-generated creations and discuss them with gastronomy and tech experts. The reactions? Enthusiastic. “It’s like eating an idea,” said one attendee. “It sounds strange, but it works.”

Sampo has already announced new collaborations with chefs, nutritionists, and data scientists to create flavours tailored to mood, climate, or individual sensory profiles.
